I found this recipe on Pinterest. I’m always on the hunt for simple, healthy recipes that are good for entertaining. This fully fits the bill. And talk about versatile. You can top the Apple Nachos with whatever you like.
Here’s what you’ll need for this version:
3 crispy and slightly tart apples (I used Jazz apples)
1 t lemon juice (mine was still green, but it worked)
3 T creamy natural peanut butter
1/4 C of any combination of nuts you like (I used a mix with cranberries and cherries in it. It was more cost efficient.)
1/4 C flaked unsweetened coconut (optional)
1/4 C dark chocolate chips (I used the minis)
This recipe couldn’t be easier. Slice the apples into 1/4-inch slices and toss the slices in the lemon juice so they won’t brown. Next. melt the peanut butter to the drizzle consistency, about a minute in the microwave. On a nice little platter place the apple slices mostly in a single layer. Then drizzle about 3/4 of the peanut butter over the apple slices. Start topping your Apple Nachos with the nuts, chocolate chips (and coconut if you choose). Drizzle the rest of the peanut butter over the Apple Nachos.
You can serve the Apple Nachos right away or place them in the refrigerator for later. The peanut butter will solidify somewhat again. Either way, it’s delicious!
